Easy Loaded Baked Potato Soup

We have a pretty busy week this week, as we did last week and it seems even the week before had a lot going on as well. Maybe that is our new normal, at least for a little while. One of the big things going on in our life this week is that I have to take Logan to Middle School registration night.

And he’s about to be turning 11 in less than 2 weeks. I am a little bit in the mode of thinking about birthday plans and the fact that I am going to have an 11 year old! What?! When did that all happen?!

Something easy, but still yummy and warm (because after a week of pretty much spring weather, we are now getting snow again), was definitely in store for our dinner plans.

I thought it would be fun to do a DIY Soup Bar. It made it more interesting and fun for everyone to be able to top their soups the way they wanted and add all kinds of mix-ins to the base that I provided.

I think for kids it gives them a little bit of an illusion of control regarding what they are going to eat for a meal, when otherwise they might not be so happy with what you’re offering.

I decided I wanted to do a an easy baked potato soup bar. I loveLoaded Twice Baked Potatoes and thought that those elements would taste awesome in soup form. It didn’t take very long at all to prep all of those elements to go along with a pot of Bear Creek Creamy Potato Soup.

So, during the day when they were at school, I chopped up some bacon and threw it in the oven to make my favorite Homemade Bacon Bits, shredded some cheese, sliced green onions, steamed the broccoli, heated the soup.

Then I put all the ingredients in individual bowls and dishes and stored it in the fridge until dinner. When it was dinner time, I just quickly reheated the soup on the stove, laid everything on the counter and told the kids dinner was ready.

It was so super easy! And it made our evening go really smoothly since it was all prepped ahead of time and the mess was really minimal to clean up.

Madeline did the hardest part of loading all of the dishes in the dishwasher and Logan took the trash out. Hosting a DIY Soup Bar, such as this Easy Baked Potato Soup Bar, would be a really fun evening to have friends over as well.

I think guests would love being able to personalize their own bowls and enjoy some hot soup together on a cold evening, maybe with some board or card games to play with while socializing.

Baked Potato Soup Topping Ideas:

You’re welcome to top this easy baked potato soup with any of your favorite baked potato toppings! Mix and match the cheeses, vegetables, and garnishes to your liking.

A few of my favorite loaded baked potato soup toppings include:

  • Shredded cheddar cheese
  • Shredded fresh parmesan
  • Sour cream
  • Homemade Bacon Bits
  • Sliced green onions
  • Steamed broccoli florets

Tips for Making the Best Baked Potato Soup

If adding the sour cream to the loaded baked potato soup, it’s important that you add it at the very last minute. If you cook the sour cream for too long, it may split and cause your soup to look curdled. It’d still be safe to eat, but it wouldn’t look as creamy and delicious!

I like adding nutritional yeast to this easy baked potato soup to add a cheesy flavor, but you’re welcome to omit it. Or, you can stir in regular shredded cheese if desired.

If serving this loaded baked potato soup as a soup bar, don’t forget to put spoons in all the dishes holding the toppings. It keeps hands clean and the food germ-free!

FAQs

How do you make potato soup not bland? ›

To keep that from veering into bland territory, you can add dried herbs, stock concentrate + actual stock, ample garlic, and always heroic cream cheese to the mix, as we do in this recipe.

How to make baked potato soup thicker? ›

Combine cornstarch and a little bit of water—or the chicken stock from the soup—in a small bowl. With the soup simmering over medium-low heat, whisk in the slurry. The soup should start to thicken almost immediately.

What can I add to potato soup for flavor without? ›

Use plenty of cream combined with milk, lots of cheddar cheese, garlic, ground black pepper, salt to taste, creamery butter and parsley. Don't forget the potatoes boiled than baked into the soup.

What potato holds up best in soup? ›

ANSWER: Waxy potatoes or those called boiling potatoes stand up well in soups and stews. These have thin skin and are high in moisture and low in starch. Potatoes that are low-starch and high-moisture hold together better. Yukon Gold potatoes are on the medium-starch side and will hold their shape in soups.

How to make can potato soup taste better? ›

Herbs: Fresh chives, thyme, or cilantro stirred in just before serving. Spices: Your soup is probably salty enough, but what about simmering a bay leaf in there for a while (don't forget to remove it before serving)? Depending on the soup's flavor profile, you could shake in some cumin or red pepper flakes.

How to add flavor to bland potato soup? ›

Add milk, potatoes, Worcestershire sauce, dry mustard, allspice, celery seed, thyme, seasoning salt, dry white wine, cayenne pepper and chicken granules. Allow to simmer and thicken, stirring frequently, until the potatoes are cooked through, approximately 25 minutes.

Why isn't my potato soup creamy? Most creamy soups require you to add dairy of some sort into it. If you're finding your soup is too thin adding milk, add in cream instead, or whole milk.

Why do you add flour to the potato soup? ›

First, the starch in the potatoes will help thicken it. I also whisk together some flour and milk and add it to the soup to give it some body. There's heavy cream in it, too. Heavy cream is nice and thick on its own, but it gives the soup next-level thick, rich creaminess.

Can I add milk to soup to make it creamy? ›

Milk or Half-and-Half: This is the other magical ingredient that turns your homemade chicken noodle soup into the creamiest soup ever. Use 1 cup of whole milk or 1 cup of half-and-half.

How to make soup really flavorful? ›

Use fresh vegetables, high-quality meats or broth, and fresh herbs to add depth of flavor. Add acidity: A squeeze of lemon or lime juice, a dash of vinegar, or a splash of wine can brighten the flavors of a soup and make it taste more complex.

Why aren't my potatoes getting soft in my potato soup? ›

It's best to use fresh, firm potatoes. Acidic Ingredients: If your soup contained highly acidic ingredients (e.g., tomatoes), it could have affected the texture of the potatoes. Acidic ingredients can slow down the softening process of potatoes.

Should I cook potatoes before adding to soup? ›

Bring a pot of water to a boil, add the potatoes, and cook for 5-10 minutes until partially tender. Drain and then add them to your simmering soup for finishing. 3. Roasting: For a richer flavor and slightly crispy texture, try roasting the potatoes before adding them to the soup.

Why is my potato soup foaming? ›

The purple foam that you're seeing while making potato soup with Russet potatoes, barley, onions, and water is likely due to a chemical reaction between the potatoes and the water. While it's not common for the foam to turn purple, it could be related to the type of potatoes you're using or some other factors.

Why is my potato soup gluey? ›

If you've ever tried potato leek soup and found it to have a gluey texture, it's because the potatoes released too much starch from being over handled. This is unfortunately easy to do with a food processor or blender (heck, it can even happen when making mashed potatoes, which is why I avoid using an electric mixer).

How do I fix bland tasting soup? ›

Add acidity: A squeeze of lemon or lime juice, a dash of vinegar, or a splash of wine can brighten the flavors of a soup and make it taste more complex. Experiment with different cooking methods: Roasting or caramelizing vegetables before adding them to the soup can bring out thei.

What can I add to soup to make it less bland? ›

Use fresh, good quality ingredients like vegetables and herbs. Add a little bit of vinegar or lemon juice to your soup to make it taste better. Use a high-quality broth or stock as a base for your soup. Roast or caramelize your vegetables before adding them to your soup to bring out their natural sweetness.

Why are my potatoes bland? ›

Like pasta, potatoes absorb the water they're cooked in. Leaving salt out means you're starting off with bland potatoes. Follow this tip: Begin the process of seasoning your mashed potatoes by adding salt to the water when cooking the potatoes.
