The viral Upside Down Puff Pastries are definitely worth the hype! They're so fun and easy to make! Here I'm sharing a savory and sweet flavor that are both so so good!

Have you tried the viral Upside Down Puff Pastry hack?? I've been seeing these pastries shared all across TikTok and social media and finally decided to give this trend a go….I wish I didn't wait so long!

You can make them with so many different flavor combinations, the options are endless! Here I've made a savory and sweet option for you to try. I have a classic Apple Pie flavor along with an Italian flavor which is topped with oozy stracciatella cheese. YUM!

Ingredients to make Upside Down Puff Pastries

  • Puff Pastry Sheets are of course the main star of the viral upside down puff pastry squares! They're a light and flakey dough which become crispy and puff up when baked in both savory and sweet recipes. They are purchased in sheets and you can find them in the refrigerator or freezer section of your supermarket

Savory Italian Puff Pastries

  • Parmigiano Reggiano cheese aka parmesan cheese is the base of the Italian puff pastry squares. It creates a yummy parmesan crust when flipped!
  • Sun Dried tomatoes are then placed on top and work so well with the flavor combination. I've used Italian marinated sun dried tomatoes you can purchase from your supermarket or Italian grocer. I also tried these pastries with fresh tomato and cherry tomatoes which didn't work as well
  • Basil pesto is spread to the inside of the pastry sheets which acts as the sauce. I've made my own pesto which is super easy to make! You can of course buy it too
  • Stracciatella cheese is added for a delicious creamy topping. It's a creamy Italian cheese made from pulled mozzarella shreds and heavy cream. It's actually the cheese which is the filling for burrata. You can also use burrata cheese or slices of fresh mozzarella which will both work great too
  • Garnish with fresh basil leaves, drizzle of olive oil and red pepper flakes. All are optional of course but highly recommended 🙂

Sweet Apple Pie Puff Pastries

  • Red apples are what I've used as I find them sweeter and are traditionally used to make apple pies. You can also use a green apple if you prefer
  • Honey is added to the bottom of the pastry which brings a lovely natural sweetness and stickiness to the pastries. I've used organic honey, you can also substitute with agave or maple syrup to keep it vegan
  • Cinnamon is added on top of the apples for the yummiest flavor and aroma. Measure this with your heart 🙂 I personally love cinnamon so I add quite a bit
  • Garnish with a dusting of icing sugar because why not! You can even serve with a spoon of vanilla ice cream to take it to another level

How to make Upside Down Puff Pastries

These upside down puff pastries are so fun to make and can be made in no time. Here are my simple steps to make Italian and Apple Pie flavors.

  1. Preheat the oven to 200℃/400℉. Cut the puff pastry sheet into 4 even squares and spread pesto on the middle only for the Italian savory squares
  2. For the filling, refer to the recipe card below for steps to layer the Italian and Apple Pie flavor
  3. Place the puff pastry square on top of the ingredients. Using your fingers, gently press the pastry around the filling to remove any air. Using a fork, press the sides of the pastry around all the edges to seal it closed. Repeat this for the remaining pastries
  4. Bake in the oven for 8-10 minutes then flip over and garnish the apple pie pastry with a dusting of icing sugar and the Italian pastry with a heaped spoon of cheese, olive oil, basil leaves and red pepper flakes

More Toppings

There are so many amazing flavor combinations to try! Here are some yummy ideas to experiment with:

  • Peaches, pears and nectarines
  • Pineapple slices
  • Berries such as strawberries, blueberries, and raspberries
  • Caramelized onionsand balsamic vinegar
  • Different cheeses such as goat cheese, gruyere cheese and brie
  • Veggies such as asparagus or mushrooms

Storage and Reheating

Upside down puff pastries are best eaten fresh as the pastry is crispy and flakey. You can however store any leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or in the air fryer for a few minutes.

Tips & Tricks

  1. Thaw the puff pastry as per the instructions of the packet. If it's still frozen, it can tear or break
  2. Be gentle when sealing the puff pastry sheets as they are very delicate. Use your fingers to carefully close the filling under the pastry and then seal the edges with a fork
  3. To make more crispy and golden, you can brush with an egg wash before baking
  4. Make sure to use parchment paper otherwise your ingredients will stick on the baking tray and you will lose all your yummy toppings

Can I use frozen puff pastry for this recipe?

Yes, you sure can. Thaw as per the package instructions and its good to go!

Can I use different toppings?

Yes of course! The options are really endless with so many combinations that will work beautifully! I have some listed above but feel free to experiment with your favorite flavors. There are no rules!

Can I make this recipe ahead of time?

Puff pastries are best when eaten fresh out of the oven when they’re hot and crispy. You can however prep all the ingredients like slicing the ingredients ahead of time. Putting them together will only take you 10 minutes

Ingredients

  • 1 puff pastry sheet

Italian Pastries

  • 2 teaspoon basil pesto
  • 2 large sundried tomato pieces
  • 4 teaspoon finely grated parmigiano cheese
  • 2 heaped tbsp stracciatella cheese (you can also use burrata or fresh mozzarella)
  • Garnish - basil leaves,extra virgin olive oil and red pepper flakes

Apple Pie Pastries

  • ½ red apple cut into thin slices
  • 3 teaspoon honey
  • Sprinkle of cinnamon
  • Garnish - icing sugar and optional spoon of vanilla ice cream

Instructions

  • Preheat the oven to 200℃/400℉ and line a baking tray with a sheet of parchment paper.

  • Cut the puff pastry sheet into 4 even squares and spread a teaspoon of pesto on the middle of the savory squares, leaving a border around them

  • Italian - Add2 teaspoons of the parmesan cheese to the parchment paper in a rectangle shape then place a sun dried tomato directly on top of the cheese

    Apple Pie - Add a teaspoon of the honey to the other side of the parchment paper in a rectangle shape. place half of the slices directly on top of the honey, overlapping them in a rectangular row. Sprinkle the apple with cinnamon and drizzle over half a teaspoon of honey

  • Place the puff pastry square on top of the ingredients. Using your fingers, gently press the pastry around the filling to remove any air. Using a fork, press the sides of the pastry around all the edges to seal it closed

    Repeat the above step for the remaining half of the ingredients on the other side of the baking sheet, leaving room in between them

  • Bake in the oven for 8-10 minutes until the puff pastry has risen and is golden and crispy. Then using a spatula, flip over the puff pastries

    Garnish the apple pie puff pastries with a dusting of icing sugar

    Garnish the Italian puff pastries with a heaped spoon of cheese, olive oil, basil leaves and red pepper flakes. Enjoy your upside down puff pastries!
