This Pear, Prosciutto and Gorgonzola Pizza is a delicious combination of salty, sweet and savory flavors! Serve it for dinner or as an appetizer at your next party.
As you are reading this, I’ll be up in Vail breathing in the mountain air, hopefully getting in a great trail run and then enjoying a delicious breakfast with a gorgeous view! My husband and I came up to Vail yesterday to celebrate our 4th wedding anniversary. Last year’s anniversary I was still in the hospital, so there wasn’t a celebration. This year we’re going all out to make up for it.
Now, about this Pear, Prosciutto, and Gorgonzola Pizza. It’s more of a grown up pizza. That’s not to say that kids won’t like it, but I haven’t met too many that enjoy the pungent taste of gorgonzola or who like the idea of fruit and meat on their pizza at the same time. Isn’t it funny how our tastes change as we get older?
Growing up I was a pepperoni or sausage girl all the time. Now I find myself craving more unique flavor combinations. I love pizza with a salty and sweet combination which is exactly what you get with this one. This is a sauceless pizza, which is one of my favorite ways to eat it. My theory is, if there is enough flavor in the toppings, then a sauce really isn’t necessary.
The Pear, Prosciutto, and Gorgonzola Pizza obviously contains all of those ingredients, but I left out a few more flavor powerhouses for the sake of the title getting ridiculously long. Let’s start with the cheese. Along with gorgonzola there’s also a combination of smoked gouda and mozzarella. I adore smoked cheeses, but if you aren’t fond of them stick with regular gouda or just use mozzarella.
Caramelized onions are another ingredient that should be mentioned. I’m not a fan of raw onion on things, but if you caramelize them I could eat a whole bowl! The caramelization brings out the sweetness of the onion and makes them simply delicious!
The final ingredient not mentioned in the title is fresh thyme. Fresh thyme, cheese, and pears are amazing together, check out this appetizer I made with the combination. This pizza not only makes a great dinner, but it would also make a wonderful appetizer for any upcoming holiday parties. Your grown up guests will fall in love with all the flavors in this Pear, Prosciutto, and Gorgonzola Pizza!

Pear, Prosciutto, and Gorgonzola Pizza
Pears, prosciutto, and gorgonzola are the perfect sweet and salty pairings in this grown up pizza!

Ingredients
Caramelized Onions
- 2 teaspoons olive oil
- 1 yellow onion, thinly sliced
- 1/4 teaspoon kosher salt and fresh ground black pepper to taste
Pizza
- 1 pound pizza dough
- 1 teaspoon olive oil
- Kosher salt and fresh ground black pepper to taste
- 1 teaspoon fresh thyme
- 1 pear, sliced thin
- 1/2 cup shredded smoked gouda cheese
- 1/2 cup shredded part skim mozzarella cheese
- 1/4 cup crumbled gorgonzola cheese
- 3 slices of prosciutto, rolled up and sliced thinly
Instructions
- Preheat oven to 450 degrees. Spray a baking sheet or pizza stone with cooking spray.
- In a large skillet add 2 teaspoons of olive oil. Heat over medium heat then add the sliced onion and cook until it softens and turns golden brown (about 10 minutes).
- Roll the pizza dough out onto the sheet or stone. Brush the teaspoon of olive oil all over the top of the dough, then sprinkle on salt, pepper, and the fresh thyme.
- Sprinkle the shredded cheeses and gorgonzola crumbles all over the pizza. Top evenly with the sliced pear, prosciutto, and caramelized onions.
- Bake the pizza for 10-15 minutes or until it is bubbly and golden. Remove from the oven and serve immediately.
Notes
If you don't like smoked gouda, regular gouda or more mozzarella may be used instead.

I tried this the other day using a frozen cauliflower crust and it was amazing! The combination of cheeses and sharp (gorgonzola) and sweet (pear) were great. I thought about added some crushed walnuts next time. This is a keeper for sure.

This pizza is amazing!!! I put on honey walnuts and when it came out of the oven, I put some Arugula drizzled with Balsamic Glaze. It was amazing. Just the heat from the pizza it wilted the Arugula just a bit. it was out of this world and can’t wait to make it again!!!

Happy Holidays! Any pears (my favorite are red or green Anjou) will work for the pizza, just make sure they are ripe and sweet. I like to use pizza dough rather than a pre-baked crust. I’ve used the pizza dough from Whole Foods and Trader Joes with success. Hope this helps! By the way, we’re having pizza on Christmas Eve as well. :-)

I finally made this pizza tonight! It was absolutely amazing! I added fresh spinach to it as well and it was perfect! My husband is deployed and doesn’t like Gorgonzola/ blue cheese or even onions, so this was perfect for me to have a treat while he is away! I may have to make it again before he gets home! Just tried this pizza recipe. Its now a family favorite. Even my 4 year old loves it. She keeps asking for “pear pizza”. The only thing i did different is i didn’t caramelize the onions. And it turned out fine for us.

This is the best pizza! It’s such a combo of sweet from the pear and salty from the prosciutto then you get the savory from the smoked Gouda and Gorgonzola (which is a lot like blue cheese)! I have some very picky kids and a husband that might as well be John Wayne (meat and potatoes) and they all loved it! Thank you for sharing!
