    Hi Bebs,

    I am UK born and bred but my girlfriend lives near to Kapitangan in the Philippines. She has told me how to cook several delicious Filipino dishes and they are a regular part of diet now. I love your website and your 15 Noche Buena dishes are truly magnificent and have my salivary glands working overtime, lol. I am on a low-fat, low-salt diet following heart bypass surgery and sadly I must always remove skin and fat whenever I cook chicken, pork and beef. I will, however, still cook most of your Noche Buena recipes and they will supplement my already very exciting culinary tastes. Thank you so much for your wonderful website and I always wait impatiently for your next emails to me.

      Hi George, that is such a nice comment. I am happy you are loving our Filipino dishes and I am sorry to hear about your restricted diet due to your condition. I can imagine how difficult it must be but you can still follow some of the recipes just less the fat and skin. 😉 Maybe you could also try one of my fave dish, Hainanese Chicken. It is not of Filipino origin but is also getting popular around here. It is really not that complicated to make and taste great even though it has lesser salt.
