How to Make Homemade Refrigerator Pickles Low Carb

Cris here.

This recipe is a low carb take on my Grandma’s 123 Pickles.I always LOVED it when grandma would make these with fresh cucumbers from the garden. Now, thanks to the availability of cucumbers year-round, I make this low carb side dish often. Everyone in our family loves them– especially the kiddos and that makes my heart smile. The secret to making these low carb is using a good sugar substitute. We prefer anerythritol based sweetener like Sukrin because we feel like it tastes very close to the original but you can use your favorite sweetener of choice.

Notes on Homemade Refrigerator Pickles (Low Carb)

  • This old-fashioned recipe was originally written to make it very easy to make a small batch or big batch depending on how many cucumbers you were making.
  • You can also adjust this recipe depending on how sweet or how tart you want your pickles. Note: The vinegar will grow stronger the longer your cucumbers soak too. We rarely have leftovers longer than the next day, so we prefer to make the recipe very strong. Grandma’s original recipe was 1 part vinegar, 2 parts sweet (sugar or sugar substitute) and 3 parts water. If you don’t know how strong you want your pickles, you could always start there. Our family prefers the recipe as described in the recipe card.

Love fresh cucumbers. I might also add some halved grape tomatoes. I was not happy to see you throw those onion bulbs away. You could freeze them and use them when making stock or use them in soups or stir fry. Waste not, want not! Keep Crocken!

One of my very favorite salads ever!!!
I like to put a few ice cubes in it to help make it cold and crisp.
