Cheese Rolls also known as "pan de queso," are a popular filipino bread. They are fluffy, soft and sweet. Made with flour, butter, sugar, and milk, then filled with eden cheese or cheddar cheese and topped with butter and sugar.

The dough is rolled into individual balls, filled with cheese sticks, shaped into rolls, and baked until golden perfection. Cheese bread rolls are beloved snacks that are enjoyed by many Filipinos. It's perfect with a cup of teas or coffee.

Ingredients Needed

  • All Purpose flour: Used as the main ingredient for the dough.

Prepare the dough. In a mixing bowl combine dry ingredients, flour, sugar, instant yeast and salt. Add warm milk and stir in eggs. Mix until a dough forms.

Add softened butter and mix until butter is completely incorporated.Knead or mix using hand or stand mixer until smooth and elastic.

Rise the dough. Place the kneaded dough in a greased bowl, cover with a clean plastic wrap, and let it rise for about 1 hour, or until doubled in size.

Divide the dough. Divide into equal-sized portions. Flatten each dough portion and place cheese filling in the center, roll and tucking the sides in to fully enclose.

Transfer. Place the filled dough on a baking sheet lined with parchment paper, leaving some space between each roll. Let it rise for another 30 minutes.

Bake. Bake on a preheated oven until golden brown.

Ingredients

  • 3 cups all purpose flour add about 3-4 tablespoons
  • cup sugar
  • 1 tablespoon instant yeast
  • ¼ teaspoon salt
  • 1 cup milk lukewarm (110°F (43°C)
  • 1 stick unsalted butter softened
  • 2 medium eggs
  • 16 sticks cheese sticks 3-inch long and 1cm thick

Instructions

  • In a large mixing bowl, combine the flour, sugar, salt and instant yeast.

  • Make a well in the center and add lukewarm milk and eggs. Attach the dough hook and mix in lowest speed until well combined.

  • Start adding 2 tablespoons of flour until the dough become less sticky or more if needed. I added 4 tablespoons. Beat for 8-10 minutes until dough forms. Add cubes of butter one at a time while the mixer is running. If using hand kneading, transfer the sticky dough on a greased surface and knead at least 10 minutes or until smooth and has passed the windowpane test.

  • Place the kneaded dough in a greased bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm place, for about 1 hour, or until doubled in size.

  • Punch down the risen dough to release the air. Divide into equal-sized portions. Flatten each dough portion and place cheese sticks filling in the center, roll and tucking the sides in to fully enclose.

  • Place the filled dough on a baking sheet lined with parchment paper, leaving some space between each roll. Let it rise for another 30 minutes.

  • Bake in the preheated 160℃/320 ℉ oven for 12-15 minutes, or until the rolls are golden brown and cooked through.

  • Once baked, remove from the oven and let it cool. Brushed with butter and sprinkle some sugar.
