Can I use a different type of Apple?
I do not think that the type of Apple will make much of a difference ultimately. The point is you want one that will soften slightly, but not become mushy and too soft. Granny Smith is the one I found that holds up.

The Apple Fritter Bread is best if kept in an airtight container and then placed into the refrigerator. It will stay fresh for up to 4 to 5 days.
Can I freeze the Apple Fritter Bread?
I have always had great results when I have frozen the Apple Fritter Bread. I have to be honest though, I do prefer the bread frozen without the glaze on it. Once you thaw the bread, you could drizzle the glaze over the top.
What do you need to make Famous Apple Fritter Bread
2 large eggs
1 ½ tsp Vanilla extract
⅓ cup light brown sugar
⅔ cup granulated sugar
1 tsp ground cinnamon
½ cup butter, unsalted, softened
1 ½ cup flour
1 ¾ tsp baking powder
½ cup whole milk
1 large Granny Smith Apple, peeled and diced
1 tbsp granulated Sugar
1 tbsp ground cinnamon
Glaze:
1 cup Confectioners Sugar
¼ cup milk
How to make Famous Apple Fritter Bread
FIRST STEP:
Preheat the oven to 350*
In a small bowl, combine the cinnamon and the brown sugar
Grease a 9 inch loaf pan with a non stick spray
Add the butter and sugar into a bowl and beat until smooth
Add the eggs one at a time, beating after each addition
Add in the vanilla extraction another bowl combine the flour and the baking powder and then gradually add it into the butter mixture
Add the milk and mix until smooth
SECOND STEP:
Pour half of this batter into the prepared loaf pan

Place half of the apples over the batter
Sprinkle with half of the brown sugar and cinnamon mixture
THIRD STEP:
Lightly press the apples into the batter
Pour the remaining batter over the apple layer, Top with the remaining apples and brown sugar mixture
Using a knife, swirl the brown sugar mixture into the apples
Place into the oven and bake for 40 to 50 minutes, when a toothpick comes out clean, the bread is done
Remove the bread from the oven, let sit for 10 minutes
Turn the bread out onto a wire rack
FOURTH STEP:
In a small bowl combine the Confectioners Sugar and the milk, be sure to remove all lumps
Drizzle the glaze over the top of the Apple Fritter Bread
