Chris and I’s first date was at one of our favorite restaurants in Columbia, Missouri. We’d complete each meal with their signature dessert, a Phyllo Brownie.

I love using phyllo dough and phyllo cups to make an ordinary dessert (or appetizer) extraordinary without the effort. Phyllo is an easy way to elevate brownies and take them to the next level!

This is my absolute favorite phyllo dessert. The flaky dough encompasses a rich, chocolate brownie to add a gentle crunch. When served a la mode with Homemade Ice Cream it’s irresistible!

Phyllo or Filo is very thin pastry dough that is generally layered in sheets, brushed with butter (or oil) and baked.

  • Phyllo Dough – Homemade or store-bought. Make sure you set it out in plenty of time to defrost according to package instructions.
  • White Granulated Sugar – Sweetens brownies to perfection while adding texture.
  • Powdered Sugar – Also known as confectioner’s sugar, it sweetens while maintaining a luxurious texture.
  • Cocoa Powder – Sift if it’s clumpy for the best consistency.
  • All Purpose Flour
  • Salt – This simple ingredient brings out all the other flavors when baking.
  • Eggs – Eggs serve as the leavening agent in brownies making them rise.
  • Oil – Vegetable or canola oil.
  • Water – Water makes brownies more tender and gives them a smooth, yet thick consistency.
  • Vanilla – Just a hint of vanilla!
  • Butter – Melted butter to brush the dough and seal.

How to Make Phyllo Brownies

  1. Prep – Preheat oven, grease baking pan and thaw phyllo.
  2. Make Brownie Mix – Combine sugars, cocoa powder, flour and salt. Gradually add in eggs, oil, water and vanilla until just combined.
  3. Bake – Slightly under bake.

  • à La Mode – Serve it with your favorite Homemade Ice Cream! The options are endless! Some favorites include Peanut Butter Ice Cream, Peppermint Ice Cream, Eggnog Ice Cream, and of course classic Vanilla Ice Cream.
  • Top with SauceChocolate Sauce, Raspberry Sauce, Strawberry Sauce or Fleur De Sel Caramel Sauce.
  • Nuts – Toasted almonds, walnuts and pecans or Candied Nuts are the perfect garnish with a crunch.

  • Plan ahead. Most phyllo takes 3 hours to thaw.

Most grocery and big box stores carry phyllo near frozen pie crusts. You can even find it seasonally at stores like Trader Joes.

Is puff pastry the same as phyllo?

No, they’re not interchangeable. Phyllo are thin layers of pastry while puff pastry is leavened into thick pastry.

It’s best served immediately.

  • Preheat oven to 350° F. Grease 9×9 baking pan.

  • In a large mixing bowl, combine sugars, cocoa powder, flour and salt.

  • Add eggs, oil, water and vanilla until just combined.

  • Pour batter into baking dish and bake 30 minutes (you want them solid, but slightly underbaked) Allow to cool and cut into squares.

  • Trim and wrap each brownie in 2 sheets of phyllo dough. Place on baking sheet and brush with melted butter.

  • Bake 10 minutes. Serve warm.
