Differences Between Eggplant & Chicken Parmesan | Bricco Salumeria & Pasta Shop (2024)

Chicken parmesan and eggplant parmesan are two classic staples of Italian cooking. You probably already know the biggest difference between the two: one is made with chicken and one is made with eggplant! While that’s the most obvious contrast between the two cuisines, it doesn’t stop there. As it turns out, there are a lot of other things that make the two dishes differ, all the way down to how they are prepared! We’ve highlighted some of the biggest differences between the two dishes.

Preparation

One of the biggest differences (besides the obvious one) between chicken parmesan and eggplant parmesan boils down to how it’s prepared. Chicken parmesan is almost always breaded before it’s fried, and a lot more seasoning is added to enhance the flavor. With eggplant parmesan, you have to salt the eggplants and let them sit for an hour. It helps to draw out the excess moisture and prevents more oil from being absorbed during the frying process. The only similarities the two dishes share is that both of them are fried to achieve the desired result.

Origins

Surprisingly enough, only one of these dishes has concrete origins. Chicken parmesan is known to have originated in the United States, but the origins of eggplant parmesan are foggy at best. Some think that it originated in Italy, close to a town called Parma. While it would explain how the dish got its name, eggplants aren’t native to that part of Italy. So, nobody knows how eggplant parmesan truly came to be!

Satiety

When we say a food has high satiety, we mean that the food is very filling. You’ll feel like you’ve had a full meal with foods that are high in this factor. Chicken parmesan does an excellent job with this thanks to its high concentration of protein. Eggplant parmesan is a lot healthier for you than chicken, but it comes at the cost of being a lot less filling. If you want a full meal, chicken parm is a better option. If you’re looking for nutritional benefits first, eggplant parmesan will be your friend.
